PROOFERS/PROVERS
We supply 2 (two) types of Provers, Automatic Swing Tray Provers and Trolley Provers.
Automatic Swing Tray Provers
Our automatic swing tray provers, works as follows:
• Pans or trays are loaded into the prover with an automatic loader.
• Swing trays, than carry the product through the prover
• Once the product reaches the end of its proving cycle, the pans or trays are
automatically removed with an unloader.
The swing trays are carried on chains (the swing trays are connected to the chain with stainless steel pins).
The framework and cradles are galvanised so as to avoid rusting. The prover sprockets are fitted with heavy duty bearings and each hub contains grease nipples for easy lubricating. The cladding around the frame is constructed from 70mm Chromadek panels, with two doors. Stainless Steel cladding is optional.
The prover is a walk in prover, and there is approximately 800mm on the sides of the prover, making easier for maintenance.
Our air conditioning system is design for optimal proving. The ducting for the humidity and temperature is through a closed system which circulates the air uniformly with
the assistance of a fan.
Humidity and temperature are controlled automatically through electronic controllers, which
display humidity in RH(relative humidity) and temperature in degrees Celsius or Fahrenheit. A PLC controls the loading and unloading functions.
Steam pipes and heat exchangers are standard with all our larger provers. Steam is supplied from a boiler to a pre-fitted connection linked to the steam pipes.
Humidity in the smaller provers can be created through pressurised hot water tanks using elements, and in the larger provers the ideal situation is to use steam generators or boilers. Heat can be created by using dry elements in the smaller provers.
Drip feed lubricators are standard on all swing tray provers for the continuous lubrication of the main prover chain.
Swing tray Provers are normally used in the production of tin bread, bread rolls and buns.
      
      
      
Trolley Provers
Our Box Provers are constructed from 70mm Chromadek or stainless steel panels. Provers can be fitted with doors or plastic curtains or both.
Our air conditioning system is design for optimal proving. The ducting for the humidity and temperature is designed to circulate the air uniformly with the assistance of a fan. The ducting is designed so as to ensure an even proof from the top of the rack/trolley to the bottom.
Humidity and temperature are controlled automatically through electronic units, which display humidity in RH (relative humidity) and temperature in degrees Celsius or Fahrenheit.
Humidity is created using water tanks with Kalrod elements. Heat is created using dry heat elements.
Steel guides are fitted to the floor so as to avoid trolleys knocking into each other.
